Sweet & Spicy Wings

3 lbs chicken wings
2 tbsp vegetable oil

1.Preheat oven to 400 degrees F. Line a sheet pan with foil and place an oven safe rack on top of foil. Coat the rack with cooking spray.
2.Place the chicken wings in a large bowl and toss in oil.
3.Arrange the chicken wings in a single layer on the rack
4.Bake for 45 minutes or until crispy.

2 shallots, minced
6 cloves garlic, minced
2 jalapenos, minced
1.5 c bourbon
½ c brown sugar
1/3 c honey
2 c Thai sweet chili sauce
½ c Red Hot

1.Melt butter in saucepan
2.Sautee shallots, garlic and jalapenos in saucepan for 2 minutes.
3.Add bourbon, sugar and honey. Cook for 2-3 minutes at a boil, until alcohol is burned off.
4.Add remaining ingredients and cook for 5 minutes. Stir frequently.
5.Strain sauce through a colander. Toss wings in sauce and serve.
